Recipes for the Homesick

All of these recipes are tried and true. They remind me of the food I grew up with and the food I can't buy here in Brazil. Check back from time to time - as I discover and test new recipes, I'll add them to the list. Bagels

  • 1 1/4 c warm water
  • 4 1/2 c flour
  • 3 tbsp sugar
  • 1 tsp salt
  • 2 tbsp oil
  • 1 tbsp yeast
Let the yeast grow in the warm water for about 5 minutes. Then add the flour, sugar, salt, and oil. Mix until combined and let rise for one hour. Knock down and divide into 8 balls. Poke a hole through the center of the balls and let them rise for 10 minutes. Boil a pot of water and let the bagels sit in the boiling water for 1 minute on each side. Then bake at 200C for 30 minutes. 



No-Knead Bread
  • 3 c flour
  • 1 tsp salt
  • 1 tbsp yeast
  • 1 1/2 c warm water
Let the yeast grow in the warm water for about 5 minutes. Then add the flour and salt. Mix until combined and let rise for one hour. I let mine rise in a metal or glass (oven-saefe) bowl. I put the risen dough still in the bowl right into the over at 200C for 35 minutes.

(With the bagels and the bread, you can add anything you'd like. I like to add cinnimon and raisins to the bagels and sometimes honey in the bread. I also like to top the bread with salt before it bakes.)



Crepes
  • 3 eggs
  • 2 c milk
  • 2 tbsp melted butter
  • 1 c flour
  • 1 tsp sugar
  • 1/2 tsp salt
Whisk the eggs and milk together. Add the melted butter. Add the flour, sugar, and salt. I cook these similar to pancakes - a small circle of batter in a skillet over low heat, flip once. 



Calzones
  • bread dough (see recipe above)
  • tomato sauce
  • basil
  • mozzerella
  • any other fillings you'd like (mushrooms, peppers, etc).
For these, I use the bread from the no-knead bread recipe. After it's risen, I knock it down, roll it out very thin, and cut it into rectangles. To half the rectangle I add the sauce, basil, and mozzerella. Fold the rectangle in half to seal the calzone. Bake at 220C for 10 minutes.



Heavy Cream
  • 2 parts warm milk
  • 1 part melted butter
Mix and let sit for 5 minutes.



Oreo Frosting
  • 10 Oreos
  • 1 c butter
  • 3 c powdered sugar
  • 1 tsp vanilla
  • 2 tbsp heavy cream 
Crush up the oreos and combine with butter, powdered sugar, vanilla, and heavy cream. (You can use any cookies with these, but since Oreos are kind of expensive here, I love to use them in this frosting. It makes the whole frosting taste like Oreos).



Corn Dogs
  • 3/4 c cornmeal
  • 3/4 c flour
  • 1 tbsp sugar
  • pinch salt
  • 1 1/2 tsp baking powder
  • 1 egg
  • 2 tbsp honey
  • 2 tsp oil
  • 3/4 c buttermilk
Combine everything. To make coating the hot dogs easier, I cut the hot dogs in half and put the mix into a cup. Then I dip each hot dog half in the mix. Fry in a pan of oil.



Dutch Apple Pie

(filling)
  • 5 1/2 c apples
  • 1 tbsp lemon juice
  • 1/2 c sugar
  • 1/4 c brown sugar
  • 3 tbsp flour
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
(topping)
  • 3/4 c flour
  • 1/4 c sugar
  • 1/4 c brown sugar
  • 1/3 c butter
For the filling, combine everything. For the topping, combine everything. I have a really hard time making pie crusts here because the flour is different - I prefer to use crushed up crackers and butter as a pie base, but you can use whatever you'd like for the bottom crust. In the pan/pie tin add the pie bottom crust, then add the filling, then top with the flour/sugar/butter mixture.



Banana Pudding
  • 5 bananas
  • 3 c sugar
  • 3 tbs flour
  • 1/4 c corn starch
  • pinch salt
  • 1 tsp vanilla
Heat the milk over low heat until warm. Add the sugar, flour, corn starch, and salt. Cook about 10 minutes until tick. Remove from heat and add in vanilla. Then add in the bananas. You can mash some of the bananas if you want, but I like to just cut them up and throw them in the mix. 



Chicken Stock
  • chunks of chicken
  • 1/2 onion
  • 1 carrot
  • 2 garlic cloves
  • salt and pepper to taste
  • 7-8 c water
Add everything, bring to a boil, then simmer 3-5 hours. Strain and retain the water, which is now chicken stock. If you want to make vegetable stock, you can add more vegetable types and skip the chicken.



Hot Chocolate
  • 400 ml milk
  • 100 g chocolate
  • pinch of salt
Combine everything and heat over low heat until warm. (Warning: this is 1000 Xs better than those hot chocolate packets you add to hot water, and it's really addicting).



Side Salsa (great on rice - not spicy)
  • 1 large onion
  • 4 tomatoes
  • 1 green pepper
  • 1 red pepper
  • 1/3 c parsley
  • 1/4 c vinegar
  • 1/2 c oil
  • salt and pepper to taste
Dice everything and combine.



Banana Bread
  • 2 c flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/3 c butter
  • 1 c sugar
  • 1 tsp vanilla
  • 1 egg
  • 3 bananas
Mash the bananas. Combine everything and cook at 200C for 20 minutes.



Coleslaw
  • 1 head of cabbage
  • 1 carrot
  • 1/2 c mayo
  • 1/4 c sugar
  • 1/3 c milk
  • 1 tsp vinegar
Shred the cabbage and carrot. Whisk the mayo, sugar, milk, and vinegar. Toss everything together. Chill and serve.
